Hunting = Dinner

If you are an anti-hunter or a PETA idiot person just stop reading right now!

Saturday my husband went out to the Kern Refuge for some duck hunting and he managed to get five ducks.
It's been a while since the last time we ate duck so I was excited.
Roasted duck with cranberry sauce and a green salad with a neighbor's avacadoes on top.
The next day he went dove hunting and got a limit (10).
It doesn't get much better than that!

When you roast your duck do you cook it "pink" or rare? Growing up our meat was brown, skin crunchy with wild rice! Hubby thinks it should be cooked rare like on tv, yuck! That dinner looks very tasty! He just made Quacker Snackers. Piece of bacon, slice of pickled jalapeno, dab of cream cheese, and a small piece of duck (Teal), then roll up and grill/broil.

I'd say it was more pink than rare. Personally I usually prefer the rarer over the more cooked myself. A friend he went dove hunting with was telling him about something very similar to your Quacker Snackers. We'll have to try that!

Wow, that roasted mallard looks fantastic! I like it rare too - always tastes great, and we've NEVER had a problem with it.

Nice batch of doves too! We also like to grill them whole, maybe with a little bacon fat painted on the skin. The mere thought is making me hungry!

Jealous! My hubs didn't manage to get any ducks this year.
