On the latest issue of Bon Appetit magazine is a picture of an "ultimate BLT" with some ingredients I have no idea how to pronounce. We were talking about my tomatoes and the basil pesto and that gave me an idea. I'll make my own "ultimate sandwich". Not quite a BLT, but just as good.
I was going to call it a "BMTP", but after thinking again, perhaps not. Let's just call it a tomato and pesto sandwich.
First off, look at this beautiful Heat Wave tomato. It certainly is living up to it's name. Since I made this sandwich for my daughter, it does not have any onion in it. I would have added thinly sliced red onion. But basically it is crisp fried bacon, toasted home made bread, a teeny bit of mayo, slices of home grown tomato, a couple slices of fresh mozzarella, all drizzled thickly with fresh basil pesto. It was gone in a flash!
